Freezer meals

I just found this post...and I think it's brilliant...but I'm not sure I can do it. Have any of you tried something like this? Any tips or ideas or recipes that work well for this? I hate the hour long cooking time most dinners, that's when kids seem the most needy and I'm the most tired, which adds up to the most hollers per minute of the day.

I've been wanting to do this too. It would be so nice to have a bunch of healthy meals ready to just heat up. The only one I have personally done is brown bag burritos. We made a bunch and they were really nice for quick lunches. I need to make them again.

We used salsa instead of enchilada sauce and whole wheat tortillas and ground turkey instead of beef (just personal preferences).

A lot of people get together as a group and all work on several meals together to make it easier, then each take their share home. There are freezer meal cookbooks out there too.
